Re-Candy

Let's not waste, let's use! A new dimension of sweet snacking.

Re-Candy is a new dimension of candy that not only serves as a sweet snack, but also contains polyphenols derived from a material commonly considered a waste - grape pulp. It is assumed that about 30% of the total amount of vinified grapes are by-products left over from winemaking, including pomace - the skin and seeds, and the lees. Grape marc is a rich source of essential compounds such as dietary fiber, minerals and polyphenols. Polyphenols are bioactive compounds highly desirable for our body. They exhibit strong antioxidant activity by effectively combating the action of free radicals that are the cause of many diseases of civilization such as atherosclerosis, diabetes, neurodegenerative diseases such as Alzheimer's and cancer. Consuming adequate amounts of polyphenols is essential to keep our bodies healthy and fit. Re-Candy is a convenient and attractive way to enrich our diet with antioxidants. The balanced composition of simple sugars will provide the necessary energy to our body during competitions, workouts or even a longer bicycle or hiking trip. And in addition, the way in which polyphenols are obtained fits in with the concept of sustainability, which is so important today.

About the team

I am a PhD student at the Department of Chemistry in the Department of Analytical Chemistry. Sustainability and thus care for the environment and health are particularly important to me. On a daily basis, I am involved in the development of new analytical methods for testing the quality of Polish wines. All methods are designed in accordance with the principles of Green Analytical Chemistry to minimize the impact of chemical analysis on the environment. In addition, I am actively involved in a number of research projects including the field of sustainable management "Sustainable Management: Tools for tomorrow" and I am an active competitor of the Mountain Biking Section of the AZS University Club of Gdańsk University of Technology.

Expectations and needs of the Team

Despite the experience and extensive knowledge of extraction techniques in developing this idea, the support of specialists in food technology and/or the food industry would certainly be crucial. Given that the necessary infrastructure is needed for candy production, I am looking for a partner - a confectionery company with infrastructure for candy/jelly production.
